Enrollment (stop reminders)
When a child leaves daycare, set their last day. Parents stop getting attendance emails after that date. Kid records, allowlist, and attendance history are not deleted.

Online card payments are paused for now (Stripe fees). Families should pay by check, Zelle, or Venmo. Set PAYMENTS_ENABLED=true on Heroku when you want this live again.
